

Roast chicken is the first dish at the banquet in Peixian County, which means good luck. Famous dishes come from famous families. At the end of the Qing Dynasty and the beginning of the Republic of China, the famous roasted chicken families in Youxian County include Peicheng Han family roasted chicken, Hutun business roasted chicken, and gaoxiaohu Xinjia roasted chicken. Since the reform and opening up, the fastest developing one is Datun Li family roasted chicken. Li family roast chicken was introduced to Peixian County by the ancestors of Li Yuzhi, who immigrated to Southwest Shandong in the half fifth year of Qingwei (1855). In the 1960s, Li Yuzhi, with a unique traditional technology and after decades of production and operation, adopted live chicken to kill, with more than ten kinds of famous medicinal materials such as clove, grass fruit, peach, sand kernel, meat and so on. It was cooked with essential oil and stewed in fried old soup. It is famous throughout the country for its fresh and delicious color, bone removal and fragrance, and fat but not greasy.
